Adam Moore, owner and head chef of the Trigony House Hotel, is a man who knows his food. Having been in the business for over 20 years, Adam goes to great lengths to source local ingredients and plans his menu with an emphasis on utilising this quality produce. The result is a truly inspirational menu of modern Scottish cuisine with a dash of Eastern spice and a touch of warm Mediterranean sunshine. Adam’s dishes celebrate local fare. The braised local rabbit with cider and chorizo was sublime, while the crispy duck salad arrived on a bed of roasted red onions with an orange dressing. The meat on offer is of superb quality, with fine cuts such as the Highland popeseye steak enhanced by fabulous sauces – in this case a rich red wine and shallot gravy. The outstanding taste and texture in each dish can be enjoyed in a relaxed setting with views of the garden and rolling countryside beyond.
