Championing the Scottish larder, and quality skills and passion in the kitchen, the purpose-built Nick Nairn Cook School is a haven for foodies.
The majority of courses are taught by John Webber, a wonderfully knowledgeable and patient chef. Having trained under Anton Mossiman and alongside Anton Edelman of the Savoy, John has been in the catering industry for three decades. At Gidleigh Park Hotel in Devon, John was awarded his first accolade from Michelin; an honour he received again as head chef at Kinnaird Country House in Perthshire. Nick, who needs no introduction, teaches regularly at the school too, and loves nothing more than passing on his enthusiasm for Scottish produce.
A wide selection of courses is on offer, with the focus on increasing confidence in the kitchen by teaching core skills. Day courses start from £165 per person and cover a broad range of topics, from New Scottish Cookery to Kitchen Essentials; those looking to take things up a notch can attend three-day master classes on key ingredients such as fish and shellfish, or meat, game and poultry. If you’re completely new to the kitchen, Cooking for Life covers everything you need to know; otherwise, you can always cheat by attending Easy Posh Dinner Party.
