Chef patron Heston Blumenthal has received international recognition and awards for his outstanding contribution to gastronomy at The Fat Duck restaurant in Bray, Berkshire. One of only four restaurants in the UK to hold three Michelin stars, and one of only a few restaurants in the world to be voted ‘The Best Restaurant in the World’, The Fat Duck has been recognised for its groundbreaking research and development into the world of taste and flavour perception.

Blumenthal’s research pushes the boundaries of British gastronomy and enables a greater understanding of the way we register taste and flavour. His work into the effects of nostalgia on the palate explores the way the mind records taste through memory. For example, there are certain flavours or smells that can trigger the memory of a certain place or time, and by doing so create a stronger impact on the palate. His work with food historians has reintroduced dishes to The Fat Duck menu that have been inspired by our culinary heritage. In addition, his multisensory approach to the dining experience has resulted in sound and smell being used as a trigger to intensify the flavours and enjoyment of his cuisine. His original and innovative approach has teamed him with like-minded artists, food psychologists, perfumiers, research departments in Nottingham University and Geneva, and even magicians throughout the world – and the results of his meticulous and concentrated research are represented in the dishes on the menu at The Fat Duck.

The restaurant itself is housed in a grade-II-listed building, circa 1560, which was originally a guesthouse. Since then it has lost none of its traditions of hospitality and welcome. The Fat Duck offers the diner a comfortable and relaxed setting in which to enjoy the gastronomic journey ahead. Oak beams and low ceilings enhance the contemporary art that adorns the walls, and the bespoke coloured glass partition and iron sculpture add a clever contrast to this Tudor building. The minimalist decor works well in a restaurant that seats only 40 guests, and the combined results offer an increased air of intimacy.

The menu at The Fat Duck is matched by a carefully selected wine list which, just like the list of 30 different types of sherry, has won recognition on its own merits. The award-winning sommelier has also introduced various wine and Champagne selections to match The Fat Duck menu.
