When it comes to comfort, location, deliciousness and service, Philipburn Country House Hotel firmly ticks every box. This is the only four-star hotel in Selkirk, and it entirely lives up to its reputation as a superb venue for any occasion. Inside, you'll find 12 individually styled rooms, a fine-dining restaurant, an informal bistro, a cosy bar and excellent meeting rooms - all situated within easy reach of the A7, 35 miles south of Edinburgh. The charming Charlie's Bistro is open all week for lunch and evening meals. Expect classic bistro fare, with dishes such as freshly grilled salmon steak, served with or without a coarse-grain mustard honey glaze; grilled Aberdeen Angus sirloin steak with perfectly cooked vegetables; and, for the meat-free among you, Arborio rice risotto with red peppers, asparagus and butternut squash. A fresh fruit platter with your choice of clotted cream, ice cream or yoghurt is a delightful conclusion, and there's a thoughtful selection of wine on offer to complement.

The 1745 Restaurant features a fine à la carte menu, available seven evenings a week. The menu is lavishly tailored, featuring quality local ingredients, honed to perfection and given the Midas touch by the skilful chefs. To start you may find such elegant offerings as leek and potato scone, served with haggis and partnered by a whisky cream sauce. Fillet beef medallion filo parcel, served with a whisky and black peppercorn sauce, makes a rich and stylish main course, with more than a hint of Scottish flavour. Barbary duck breast is given the exotic treatment, dusted with Cajun spice, presented on a berry compote and drizzled with balsamic. Finish with one of the stylish desserts and a fresh coffee, and you'll be planning your return visit in no time.

Philipburn Country House Hotel is a great stepping stone to uncovering the secrets of the Borders, and equally unforgettable if just visiting for a meal. Whether a romantic dinner for two or a family celebration, the Philipburn can accommodate and advise menus to meet your needs - Scottish hospitality that simply sparkles.
