Originally a farmhouse built in 1754, this building’s sympathetic conversion into The Everley Country Hotel retains its wonderful character and charm. Proprietors Steven and Heather took over in March 2006 and tastefully renovated the bar and restaurant, while also creating additional luxury accommodation, of which they are understandably proud.
Upon arriving, we were greeted by Steven’s father, Graham, who suggested we sit on the terrace and enjoy the surroundings with drinks from the bar. We were shown the oak carvings of the gnome men, created by Whittaker of Whitby, and were told an unhappy face was carved on a Monday, whilst Friday faces appear far happier – a unique feature that charms guests and diners. Our own faces were certainly happy ones as we enjoyed the 32-seat terrace with its extensive grassed area, soaking up the beautiful and uninterrupted views of the Derwent Valley, set in the heart of the North Yorkshire Moors National Park. The peaceful location, with its beautiful scenery, is absolutely breathtaking and creates an idyllic setting for this country hotel.
Tearing ourselves away from the views, we studied the menu and were impressed with the wide variety of dishes offered, together with the excellent wine list. In the dining room we were pleased to find large panelled windows that enabled us to continue enjoying the views while we ate. Mushrooms and fresh chicken livers flambéed in brandy, cream and freshly chopped herbs, arrived heaped into a puff-pastry basket and were simply superb – the individual tastes magnificent. The homemade soup of the day – a hearty blend of leek and potato with a homemade roll for dunking – was full of flavour, piping hot and so, so moreish; whilst Everley’s own deep-fried croquettes of delicious haddock were complemented by prawn salad and a dressing of creamy dill and lime – a tasty starter that my companion couldn’t praise highly enough.
The seared pork fillet medallions in a creamy grain mustard, Calvados and cider sauce were absolutely fabulous. The pork was so tender it melted in the mouth and the sauce was exquisite, flawlessly designed to delight the palate. The trio of succulent lamb chops were cooked to perfection and served on a soft fondant potato with a red wine jus and a light mint sauce, while the prime chicken breast from the grill section was coated with Everley’s own Cajun spice mix and was served with homemade, roast bell pepper mayonnaise and a salad leaf garnish. Perfect chips, crunchy on the outside and soft on the inside, completed this fiery dish.
The choice of a sweet was made difficult by the wonderful selection on offer, but we eventually plumped for sticky toffee pudding with ice cream and a soft chocolate sponge that oozed a melted chocolate centre and came with white chocolate ice cream. They were both, as predicted, simply superb.
Our evening at the Everley Country Hotel was entirely enjoyable, and I urge you to experience the fine locally sourced food, good service and relaxing atmosphere for yourselves.
