The Roxburghe Hotel & Golf Club is like a very fine jewel set in the magnificent crown of the Scottish Borders countryside. Owned by the Duke of Roxburghe, this boutique hotel oozes class and sophistication yet retains a friendly warm atmosphere, making you feel as if you're staying with friends rather than at a four-star hotel. This is the place to stay for serious rest and relaxation and, with a stunning golf course, clay pigeon shooting, archery, falconry and mountain biking, some quality leisure time too.

Aside from the plush accommodation and stunning surroundings, dining at Roxburghe is a reason to visit in itself. High-quality local produce is used to amazing effect by award-winning head chef Keith Short. The hotel also has a fine choice of wines with a selection from the Duke's own cellar to complement the high standard of the food. The restaurant's à la carte menu showcases Keith's talents and takes diners on a gastronomic tour of the region's finest produce. A starter of hand-carved rare marinated Scottish beef fillet is served with rocket leaves, shaved Parmesan and ice cream flavoured with chives and local 'Olefera' rapeseed oil, and demonstrates Keith's creative foresight. Venison is given the royal treatment - peppered saddle is served with a flavoursome lentil and bacon compote, alongside roasted red onions and fine beans; while fine Scottish salmon is roasted and complemented by fennel purée, capers, black olives and tomato - a medley of flavours to enhance the delicate coral flesh of the fish. Finish the gastronomic tour de force with the light and creamy vanilla blancmange with saffron syrup, balsamic vinegar ice cream and sautéed apricots.

Unlike many fine dining menus, Keith and his team are happy to offer alternatives to diners and accommodate different dietary requirements and tastes.
