Brian Maule at Chardon d'Or
A must for all food-lovers, award-winning Chardon d'Or is the restaurant venture of chef Brian Maule which, after ten years at the top, has become a Glasgow institution. Brian's international reputation and experience is formidable. Having worked with some of Europe's finest chefs, including Albert and Michel Roux, he became head chef at their London restaurant, the two-Michelin-starred Le Gavroche, at the tender age of 24. Convinced, though, that Scotland's natural produce is unmatched, Brian opened Chardon d'Or in 2001 to take advantage of the inimitable quality and freshness of local ingredients.
Over the years he has developed a familiar relationship with a long list of suppliers from all over Scotland, ensuring the best of the season is available to him all year round. Fish and shellfish from both the east and west coasts are always well represented on the menu, but Scottish lamb and beef are a particular passion and these dishes always shine. The full experience is a seven-course 'celebration' menu that takes in the highlights of each season's menu, matching each dish with a wine to complement - decadent and completely satisfying.
Brian firmly believes that, because his name is above the door, guests should expect to see him in the kitchen; this dedication to culinary excellence is evident in every flawlessly prepared dish. When service winds down, Brian joins his guests in the dining room, chatting and making sure first hand that every dish was enjoyed.
The dignified Victorian townhouse just off Blythswood Square that houses the restaurant is complemented indoors by modern but elegant decor - crisp white linen, sparkling tableware and striking floral displays create a comfortable, rather than formal, atmosphere. At night the room is filled with candlelight, providing a warm respite from Glasgow's sometimes chilly streets. In addition to the main restaurant, Chardon d'Or boasts a unique opportunity for the ultimate private dining experience. The lower level of the restaurant hosts three dining suites with movable walls, making sure the room is always perfect for groups of any size. This versatility allows the restaurant to create a more professional atmosphere for business lunches, staff nights out and product launches, as well as weddings, anniversaries and birthday parties with a personal, intimate feel. Adjoining the suites is a large private bar decorated with modern art and furnished with plush leather couches where taking it easy is the priority. Soft plush sofas, low lighting and mellow music make the bar the perfect setting for preprandial drinks with friends, family and colleagues. With the same relaxed atmosphere and standards of excellence as the restaurant, the bar houses an impressive range of spirits, naturally including an eclectic list of Scottish malt whiskies, and is the perfect place to thumb through the extensive and award-winning wine list, with bottles sourced from all over the world.
