The jumbo prawn starter is a revelation. Here, juicy seafood is given a liberal dose of oomph via the addition of an olive oil, lemon juice, balsamic vinegar and freshly ground black pepper marinade, then chargrilled to sheer perfection. Similar expertise is employed in producing chicken tikka. The tender breast meat is given the attention of herbed yoghurt, pounded spices and roasted cumin. Mains include excellently flavoured lamb pasanda with almond sauce and a hint of cardamom, perfectly cooked and showing evidence of a kitchen at the very height of its culinary prowess.
