Head chef Michel Bouyer has been awarded two coveted AA rosettes for the restaurant, in recognition of his creative flair and the skilful way in which he has reinterpreted classic French cooking using Scotland's abundant natural larder.
In terms of culinary style, Michel has fused his knowledge of traditional Breton cooking with the skills he honed in Paris, and brings both to bear in the preparation of fine, fresh Scottish ingredients.
