Chisholms Restaurant is located in the most unique and historic surroundings within the Caledonian Hilton Hotel. The magnificent red-sandstone building originally served as a railway station, later turning into a railway hotel before its current transformation into a Hilton hotel, complete with its own car park for your convenience. Three of the five walls in the restaurant were originally exterior walls of the railway station platform, further adding to the dining room's charm.

Head chef Kenny Coltman and his team ensure the menu reflects the seasons and sources produce from the rich local pickings. Much of the menu is Kenny's creation, and a perfectly compiled one at that. But there is still space left for all-time favourites such as steak and chips, with all the grilled meat sourced from the Scottish Borders. The subtle Scottish theme runs throughout the native head chef's menu, but does so without making you feel like haggis is the only option. However, in case you forget you are in the capital of Scotland, there is Robert Burns' Address to a Haggis printed on the back of the menu.

Satisfy your palate with Isle of Skye crab and sweetcorn chowder or smoked haddock, spinach and Mull cheddar tart to start. Continue your meal with slow-cooked free-range pork belly on black pudding mash with creamed Savoy cabbage or seared fillet of halibut, slow braised with pearl barley, Ayrshire bacon and chives. Craving something sweet? Then Chisholms will not disappoint. Try the marmalade bread-and-butter pudding with Lady Grey ice cream or espresso creme caramel with mascarpone sorbet. However, if you are sweet enough, then there is always the selection of Scottish and Continental cheese with oatcakes. Whatever you choose, there is something for everyone on the carefully constructed menu, not to mention a fully comprehensive wine list to complement any dish.

There is no need to reach for a dictionary, because the menu is wonderfully uncomplicated and what you are served is exactly what you ordered - certainly no disappointments here. The team at Chisholms are attentive and alert, always available when your glass is almost empty, without being intrusive; the perfect combination.
