Michael Wignall at Pennyhill Park
Michelin starred chef Michael Wignall has left The Devonshire Arms Hotel in Yorkshire to open Michael Wignall at The Latymer at the five star Pennyhill Park Hotel & Spa in Bagshot, Surrey.

In the five years that Michael was at the Devonshire Arms Hotel, the restaurant went from having 2AA rosettes, to having 4AA rosettes and a Michelin star. Such is the impression he has made that he has been nominated by industry magazine Caterer & Hotelkeeper for the “Best Hotel Chef” at the hotel ‘Catey Awards’ being held in London in November.
Michael, who was awarded his first Michelin star 14 years ago, describes his cooking as ‘complex and carefully crafted – a modern take on Classical dishes and themes’ and cites Pierre Gagnaire, Joel Robuchon and Martin Berasategui among his influences. “I admire these masters but I consider my cooking style to be very much my own. Whilst it is technical and the presentation is elaborate, the food itself is not intimidating because it has its roots in familiar classical dishes and all of the flavours stay true to themselves”.
The new menu is likely to include dishes such as frogs legs with roast calves’ sweetbreads, spring onions, creamed quinoa and beetroot gratin as well as cannon of salt marsh lamb with anchovy beignets, slow cooked pork belly, baby onions and tomato vinaigrette. On the dessert menu you can expect to find Michael’s signature ‘tiramisu parfait with coffee tagliatelle milk foam, cappuccino cup and honey ice cream’
